Walnut & Goji Banana Bread

4 bananas
1/3 cup unsweetened apple sauce
2 tbsp melted coconut oil OR extra virgin olive oil
1 tsp vanilla extract

Dry Ingredients:
1/2 cup GF rolled oats
1/2 cup almond meal
2 tbsp chia seeds
3/4 cup coconut flour
1/4 cup maple syrup
1/2 cup almond milk
2 tsp baking powder
1 tsp cinnamon

1/2 cup goji berries
1/2 cup walnuts, chopped
1 tbsp Mayver’s Unsalted Peanut Butter



  1. Preheat the oven to 190°C. Line a loaf tin with parchment paper
  2. In a large bowl, mash bananas with a fork. Add the coconut oil, applesauce and vanilla into the bowl and whisk together.
  3. In a separate bowl, stir all of the dry ingredients together to combine.
  4. Pour the banana mix into the dry ingredients and stir until well combined.
  5. Fold the goji berries and walnuts into the mixture.
  6. Pour the batter in the pan and bake for approx 60 minutes or until a toothpick comes out clean or with a few crumbs.
  7. Cool in pan for 5 minutes and then transfer to cooling rack. Slice and enjoy with peanut butter.
