Walnut & Goji Banana Bread

Ingredients
4 bananas
1/3 cup unsweetened apple sauce
2 tbsp melted coconut oil OR extra virgin olive oil
1 tsp vanilla extract
Dry Ingredients:
1/2 cup GF rolled oats
1/2 cup almond meal
2 tbsp chia seeds
3/4 cup coconut flour
1/4 cup maple syrup
1/2 cup almond milk
2 tsp baking powder
1 tsp cinnamon
Additions:
1/2 cup goji berries
1/2 cup walnuts, chopped
1 tbsp Mayver’s Unsalted Peanut Butter
Method
- Preheat the oven to 190°C. Line a loaf tin with parchment paper
- In a large bowl, mash bananas with a fork. Add the coconut oil, applesauce and vanilla into the bowl and whisk together.
- In a separate bowl, stir all of the dry ingredients together to combine.
- Pour the banana mix into the dry ingredients and stir until well combined.
- Fold the goji berries and walnuts into the mixture.
- Pour the batter in the pan and bake for approx 60 minutes or until a toothpick comes out clean or with a few crumbs.
- Cool in pan for 5 minutes and then transfer to cooling rack. Slice and enjoy with peanut butter.
