Tahini & Rosemary Winter Bake

Ingredients
- 1 bunch dutch carrots
- 1 red capsicum
- Punnet cherry tomatoes
- 2 lemons
- 4 small potatoes (we love kipfler)
- 1 parsnip
- 250g pumpkin cube
- 3 cloves garlic
- 2 small chillis
- 1 red onion
- Handful rosemary
- Salt and pepper
- 3 tbsp Mayver’s Hulled Tahini
- Dash of olive oil
Method
- Cut everything up into nice big chunks.
- Make sure the pumpkin and parsnip is smaller so it cooks through
- Place everything in the dish and coat with olive oil
- Dollop the Mayvers Tahini across the top of the veggies
- Squeeze the juice of two lemons over the whole tray
- Mix it up so everything is coated nicely
- Bake in the oven for 1hr on 150deg tossing every 15 minutes.
- Note:- The slower you bake it, the more delicious the flavour!
