Tahini Lettuce Cups

Ingredients

200g red cabbage

200g green cabbage

100g Edadame

2 radishes

Dill

100g corn

100g pomegranate arils

3 button mushrooms

Lettuce

Mayver’s Hulled Tahini 

Salt and pepper to taste

lemon

Method

  1. Slice radishes, button mushrooms, red and green cabbage. Add to bowl.
  2. Boil frozen corn pieces, and add to bowl with edamame and pomegranate.
  3. Finely chop dill and mix through with salt and pepper
  4. Add mixture to lettuce cup and drizzle with tahini and lemon.
