Superlicious Tahini Salad

Ingredients
Salad
- 1 cup barley*
- 1 capsicum (diced)
- 1 carrot (grated)
- 1/4 cauliflower
- Handful of goji berries
- Handful of lettuce leaves
- Salt & pepper to taste
Dressing
- 4 tbsp Mayvers Hulled Tahini
- 2 tsp pure sesame oil
- Juice of 1 orange**
*We used Sunrice’s pure Barley & Brown Rice mix
**Use juice of 2 oranges if you want some leftover dressing
Method
- Cook the barley as per instructions or by boiling 1 cup barley/rice wtih 2 cups of water for approx. 30mins or until water is absorbed.
- Lightly steam the cauliflower and set aside with the barley to cool (or place in freezer to rapidly chill it down).
- Prepare the dressing by combining all ingredients and set it aside.
- Once the barley and cauliflower has cooled, mix all ingredients (apart from the lettuce) in a big bowl and pour over the dressing.
- Serve with lettuce leaves sprinkled around the plate.
