Sandwich Brookies

Ingredients

200g dark chocolate
100g butter
1/2 cup castor sugar
1/3 cup brown sugar
2 eggs
1/2 tsp vanilla essence
1 cup plain flour
3 tbsp cocoa powder
1 tsp baking powder

 

PB & Cream Cheese Filling:

1 block cream cheese
1 tbsp Mayver’s Smooth Peanut Butter
1 sprinkle of icing sugar (to taste)

 

Method

  1. Preheat oven to 180C fan-bake. Line three trays with baking paper.
  2. Chop dark chocolate small pieces. Place butter and chocolate in a medium bowl. Microwave for 30 seconds, stir and then zap for another 30 seconds, until chocolate had melted. Set aside.
  3. In a large bowl using an electric mixer, whisk together sugars, eggs and vanilla. Whisk for 5 minutes on medium speed until light and fluffy.
  4. With the mixer still on, pour in slightly cold chocolate mixture and mix until combined.
  5. Sift in plain four, cocoa and baking powder. Fold until just combined.
  6. The mixture will be more runny than your usual cookie dough. Pour mixture into a piping bag with a large circular tip.
  7. Pipe 6 large cookies onto each tray, leaving plenty of space in between.
  8. Bake for about 10 minutes, allow to cool for 15minutes.
  9. Whip cream cheese, peanut butter and icing sugar until desired consistency.
  10. Spoon cream cheese mixture on the bottom of one cookie, and sandwich another on top and enjoy!
