Sandwich Brookies

Ingredients
200g dark chocolate
100g butter
1/2 cup castor sugar
1/3 cup brown sugar
2 eggs
1/2 tsp vanilla essence
1 cup plain flour
3 tbsp cocoa powder
1 tsp baking powder
PB & Cream Cheese Filling:
1 block cream cheese
1 tbsp Mayver’s Smooth Peanut Butter
1 sprinkle of icing sugar (to taste)
Method
- Preheat oven to 180C fan-bake. Line three trays with baking paper.
- Chop dark chocolate small pieces. Place butter and chocolate in a medium bowl. Microwave for 30 seconds, stir and then zap for another 30 seconds, until chocolate had melted. Set aside.
- In a large bowl using an electric mixer, whisk together sugars, eggs and vanilla. Whisk for 5 minutes on medium speed until light and fluffy.
- With the mixer still on, pour in slightly cold chocolate mixture and mix until combined.
- Sift in plain four, cocoa and baking powder. Fold until just combined.
- The mixture will be more runny than your usual cookie dough. Pour mixture into a piping bag with a large circular tip.
- Pipe 6 large cookies onto each tray, leaving plenty of space in between.
- Bake for about 10 minutes, allow to cool for 15minutes.
- Whip cream cheese, peanut butter and icing sugar until desired consistency.
- Spoon cream cheese mixture on the bottom of one cookie, and sandwich another on top and enjoy!
