Raw Chocolate Cheesecake

Ingredients
Base
- 1 cup almond meal
- 2 Tbsp pure maple syrup
- 1 Tbsp coconut oil
- A pinch of sea salt
Filling
- 1/3 cup raw cashews (soaked overnight)
- 160g organic nigari tofu
- 1/8 cup pure maple syrup
- 1/4 cup coconut oil
- Juice of half a lemon
- 3 Tbsp raw cacao powder
- 1 tsp vanilla extract
- Optional cacao nibs to top
Caramel Sauce
- Pure maple syrup
- Mayver’s Tahini
- A sprinkle of sea salt
Method
- Mix together all the base ingredients until combined and press into a regular pan
- Process all the filling ingredients together until smooth, pour over base, sprinkle over Cacao Nibs if using, freeze until firm or pop in the fridge overnight and slice once firm
- To make the caramel sauce combine equal parts Pure Maple Syrup and Mayver’s Tahini with a sprinkle of Sea Salt, mix until smooth
