Raspberry, Peanut Butter and Banana Muffins

Ingredients

1/2 c oat flour
1 tsp baking powder
1/4 tsp xanthan gum (or 1/2 tbs ground chia seeds or flax seeds)
1/2 tsp cinnamon
pinch of salt
1/3 cup Banana
1/3 cup sweetener of choice
1/2 tsp vanilla
1 egg
1 tbsp Mayver’s smooth peanut butter
1/3 Raspberries or Strawberries

Method

  1. Preheat over to 180°C
  2. Mix all the dry ingredients in a bowl
  3. Add the wet ingredients into the bowl
  4. Stir until combined. Line a muffin tin with cupcake liners and grease lightly.
  5. Spoon 2 tablespoons of the mixture into each muffin tin. Top and stuff with raspberries and strawberries.
  6. Put half a teaspoon (or however much you like) of Mayver’s Tasty Peanut Butter.
  7. Bake for 25-30 minutes, or until a toothpick comes out clean.
