Pumpkin Pepita Bars

Ingredients
- 1/3 cup flour (coconut)
- 1/4 tsp sea salt
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 4 large eggs
- 1 cup pumpkin (fresh roasted)
- 2 tablespoons Mayver’s Manuka Honey with Lemon (discontinued, use Honey instead)
- 2 tablespoons Mayver’s Pepita Spread (discontinued, use Mayver’s Original Super Spread)
- 2 tablespoons Mayver’s Hazelnut & Cacao Spread (discontinued, use Mayver’s Peanut and Cacao Spread)
- 1/4 cup coconut oil
- 1/4 cup Pepita seeds and raisins
Method
- In a food processor, combine coconut flour, salt, baking soda and cinnamon.
- Pulse in eggs, pumpkin, honey and oil until well combined.
- Mix in the Pepita seeds and raisins by hand.
- Transfer batter to an 8 x 8 inch baking tray.
- Bake at 180 degrees for 20-30 minutes.
- Cool and serve.
- Note: Makes approximately 16 squares. This recipe is good for people on the Paleo Diet.
