Peppy Pepita Pure-State Dip

Ingredients

  • 6 tbs. Mayvers Pure-State Pepita Spread (discontinued)
  • 1 tbs really good olive oil
  • 1 large ripe tomato or 4 mini tomatoes
  • 1 large green chili roasted and seeded
  • Handful finely chopped fresh coriander
  • Handful finely chopped fresh chives
  • 1 tsp. rock salt
  • Squeeze of fresh lime juice
  • Fresh celery and carrot for serving

Method

  1. In a blender or food processor combine the tomato and chili and process briefly. Pour into a small bowl and stir in the Mayvers Pepita Spread, coriander, chives and salt. Let the mixture stand for 30 minutes.
  2. Just before serving, stir the lime juice into the dip. It should spread easily; if it is too thick, add a little water. Spoon the dip into a serving bowl, place on a platter with the vegetables and serve immediately.
