Peppy Pepita Pure-State Dip

Ingredients
- 6 tbs. Mayvers Pure-State Pepita Spread (discontinued)
- 1 tbs really good olive oil
- 1 large ripe tomato or 4 mini tomatoes
- 1 large green chili roasted and seeded
- Handful finely chopped fresh coriander
- Handful finely chopped fresh chives
- 1 tsp. rock salt
- Squeeze of fresh lime juice
- Fresh celery and carrot for serving
Method
- In a blender or food processor combine the tomato and chili and process briefly. Pour into a small bowl and stir in the Mayvers Pepita Spread, coriander, chives and salt. Let the mixture stand for 30 minutes.
- Just before serving, stir the lime juice into the dip. It should spread easily; if it is too thick, add a little water. Spoon the dip into a serving bowl, place on a platter with the vegetables and serve immediately.
