Peanut Butter and Coconut Super Brownie

Ingredients

  • 1 tin 400g red kidney beans
  • 80g coconut oil
  • 4 tbs of Mayver’s Peanut & Coconut Spread
  • 2 eggs*
  • 1/2 cup goji berries
  • 1/2 cup coconut
  • 1 cup cocoa/cacao
  • 1 tsp cinnamon
  • 1 cup blueberries or sultanas
  • 2 tbs of honey or rice malt syrup

*If you want to go 100% vegan – try 1 tbs flaxseed meal mixed with 2 tbs water per egg. Let sit for a minute or two to thicken slightly before adding to the recipe.

Method

  1. Melt coconut oil
  2. Drain and rinse beans.
  3. Put all ingredients into a food processor. Blend until smooth.
  4. Mixture will be quite thick. Pour into brownie tin and baked at 180 degrees for around 30mins or until it’s firm to touch.
  5. Allow to cool, cut eat and enjoy!
