Peanut Butter, Coconut, Sesame and Date Bites

Ingredients

Here’s a super delish recipe featuring our Peanut & Coconut spread. It’s perfect for a healthy dessert option and you can substitute for different Mayver’s spreads. For a super size option, try with our SUPER spreads!!

  • 2 sheets gluten-free puff pastry
  • 2 tbs raw cacao powder
  • 1 tsp coconut oil (softened)
  • ¼ cup Mayver’s Peanut & Coconut Spread
  • ¼ cup sesame seeds
  • ¼ cup coconut flakes
  • 8 dates (processed to superfine)
  • pinch of sea salt (optional)
  • pinch of cinnamon
  • sesame seeds for topping

** For extra crispy pastry brush the outside of the pastry with liquid coconut oil.
*** For something a little more naughty, add 30mls of Baileys then serve with vanilla cream and raspberry coulis.

Method

  1. Blend or food process dates until they are finely chopped.
  2. Into a big bowl add the dates and all other ingredients (except for the additional sesame seeds). Mix well together till it forms a nice paste mixture.
  3. Cut semi soft pastry into 5cm squares and place tbs of mixture into the middle. Fold edges over and “scrunch” so it becomes a ball.
  4. Dust with sesame seeds and a sprinkle of cinnamon
  5. Bake in oven at approx. 220 degrees for 30 mins or until pastry is golden.
