Peanut Butter Rocky Road
Time: 20 mins | Serves: 2 - 4
1 cup coconut oil, melted
2/3 cup cacao powder
2 tbsp maple syrup
1 heaped tbsp Mayver’s Crunchy Peanut Butter + an extra tbsp for topping
2/3 cup peanuts
1/2 cup coconut flakes
Pinch of salt
- Add the melted coconut oil, cacao, maple syrup and 1 heaped tbsp of Mayver’s Crunchy Peanut Butter to a bowl and stir to combine.
- Add in the peanuts and coconut flakes and combine well. Pour into a lined tray. Swirl through the remaining peanut butter and sprinkle over the salt.
- Place in the freezer to set overnight (or minimum of 3 hours) before cutting.
- Keep stored in the freezer for a solid chocolate consistency, or in the fridge for a softer ‘fudge’ like consistency.
