PB & J Protein Bars
Time: 30 minutes | Serves: 4 - 6
Ingredients
PEANUT BUTTER BASE:
1 cup Mayver’s Peanut Butter
1/2 cup rice malt syrup
1/2 cup coconut flour
1/4 cup coconut oil
1/2 cup peanuts
JELLY LAYER:
1 cup of frozen or fresh raspberries
1/4 cup chia seeds
CHOCOLATE LAYER:
1/3 cup cacao powder
1/4 cup ricemalt syrup
2 tbsp coconut oil (melted)
Method
PEANUT BUTTER BASE:
1 – In a bowl mix all the ingredients (except the peanuts) together until well combined.
2 – Press the mixture evenly into a baking tray and sprinkle the peanut on top them press them lightly into the mix, then set in the freezer while you make the next layer.
JELLY LAYER:
3 – In a small bowl add both ingredients. In a the microwave melt the berries for 1 min to 30secs and with a folk mash the berries and chia seeds together until well combined.
4 – Then add evenly to the peanut layer and set back into the freezer for 2-4 hours
CHOCOLATE LAYER:
5 – In a bowl add all the ingredients and mix well. Once your mix has been in the freezer for at least 2 hours cut into rectangular bars.
6 – With the chocolate drizzle all over the top of each bar and set them back into the freezer for the chocolate to harden.
