PB Banana Muffins

Ingredients
100g plant based butter
30g Mayver’s Smooth Peanut Butter
100g coconut sugar
2 eggs or 2 tbsp protein powder
2 large bananas
250g plain flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp cinnamon powder
120ml plant milk
120g chopped walnuts/chocolate
100g sultanas
75ml orange juice
Method
- Pre heat oven to 170C and line muffin tray with muffin sleeves.
- In a pan add orange juice with sultanas and heat till the liquid boils. Switch off and let the sultanas soak in the liquid .
- In a bowl, cream butter & peanut butter with sugar until light and creamy.
- Beat in eggs/protein powder, then stir in mashed banana.
- Sift the flour, baking powder, soda , cinnamon powder in the bowl and fold it with buttermilk and walnuts.
- Add the sultanas and combine .
- Scoop into muffin sleeve and bake for 25-30 minute until skewer inserted in muffin comes clean .
- Dust with icing sugar and enjoy!
