No Bake Superfood Breakfast Bar

Ingredients
- 1/2 cup Mayver’s Original Super Spread
- 1/2 cup tightly packed medjool dates or soaked regular dates, seeds removed (approx. 10)
- 1 Tbsp rice malt syrup
- 1/2 cup puffed brown rice
- 1 1/2 cups rolled oats
- 1/2 cup almond meal
- 1/2 cup pumpkin seeds
- 1/2 cup sunflower seeds
- 1/2 cup dried goji berries or cranberries
- 1 tsp ground cinnamon
Method
- Prepare 20 x 20cm cake tin, spray with oil and line with baking paper or clingwrap so that you are able to easily remove bars once set.
- Place dates, rice malt syrup and Mayver’s original food spread in a high powered food processor and blend until a smooth paste forms.
- Combine puffed rice, oats, almond meal, pumpkin and sunflower seeds, dried berries and cinnamon in a bowl. Add date mixture and using your hands combine mixture until thoroughly combined.
- Press mixture firmly into prepared baking tin, place in fridge for 2 – 4 hours, or overnight, to set. Remove from fridge, cut into slices, wrap individually in plastic wrap and store in fridge or air-tight container.
