Mini No-Bake Lemon Cheesecake

For the Crust:

1 cup almond flour
1/4 cup melted butter
1 tbsp erythritol
1 tbsp Mayver’s Hazelnut, Cashew and Cacao Butter
Pinch salt


For the Filling:

250g cream cheese
3 tbsp sugar
1/2 tsp vanilla
Zest of 1/2 lemon
1 tbsp lemon juice


For the Topping:

White choc, melted
Easter eggs or bunny ears



  1. Mix all the ingredients for the crust together and place into a silicone muffin tray. Freeze for 10 minutes.
  2. Combine all the ingredients for the filling together until smooth. Place on top of bottom layer and freeze until set.
  3. Add melted chocolate and easter eggs or bunny ears and enjoy!
