Mini No-Bake Lemon Cheesecake

Ingredients
For the Crust:
1 cup almond flour
1/4 cup melted butter
1 tbsp erythritol
1 tbsp Mayver’s Hazelnut, Cashew and Cacao Butter
Pinch salt
For the Filling:
250g cream cheese
3 tbsp sugar
1/2 tsp vanilla
Zest of 1/2 lemon
1 tbsp lemon juice
For the Topping:
White choc, melted
Easter eggs or bunny ears
Method
- Mix all the ingredients for the crust together and place into a silicone muffin tray. Freeze for 10 minutes.
- Combine all the ingredients for the filling together until smooth. Place on top of bottom layer and freeze until set.
- Add melted chocolate and easter eggs or bunny ears and enjoy!
