Mayver’s Super Salad

  • 1 cup quinoa
  • 1 red onion (caramelised)
  • 2 tbsp Mayvers Nut+ Immune Spread (or Mayver’s Original Super Spread)
  • 1/4 broccoli (lightly steamed)
  • 250g roasted pumpkin
  • Handful baby spinach
  • 1 tbsp coconut oil


  1. Cook the quinoa as per instructions
  2. Roast your pumpkin in oven at 180deg for approx 35mins
  3. Lightly caramelise your onion (either in oven or on stovetop)
  4. Lightly steam your broccoli till it’s tender
  5. Once ingredients have cool, add everything to a big bowl
  6. Stir through coconut oil and Mayver’s Spread
  7. Add a sprinkle of pine nuts
