Mayver’s Super Salad

Ingredients
- 1 cup quinoa
- 1 red onion (caramelised)
- 2 tbsp Mayvers Nut+ Immune Spread (or Mayver’s Original Super Spread)
- 1/4 broccoli (lightly steamed)
- 250g roasted pumpkin
- Handful baby spinach
- 1 tbsp coconut oil
Method
- Cook the quinoa as per instructions
- Roast your pumpkin in oven at 180deg for approx 35mins
- Lightly caramelise your onion (either in oven or on stovetop)
- Lightly steam your broccoli till it’s tender
- Once ingredients have cool, add everything to a big bowl
- Stir through coconut oil and Mayver’s Spread
- Add a sprinkle of pine nuts
