Maple Spiced Sweet Potato with Tahini Dressing

4 sweet potatoes cut in half
2 tbsp olive oil
1 tsp ground cumin
1 tsp ground coriander
½ tsp chilli powder
1 tsp smoked paprika
½ tsp turmeric
1 tsp salt
3 cloves of garlic, crushed
3 tbsp maple syrup

Tahini Dressing
2 tbsp Mayver’s Hulled Tahini 
4 tbsp water
1 tbsp unsweetened coconut yoghurt (or sub with olive oil)
1/4 cup chopped coriander
Juice from half a lemon


1. Preheat oven to 200°C
2. Either slice each half of the potato widthwise but not all the way through or create a criss cross pattern with a small sharp knife.
3. Combine all the ingredients except for the maple syrup and brush the potatoes with the mixture.
4. Drizzle maple syrup and bake for 30-40 minutes (depending on how much you like the charred taste – I love it!).
5. Serve with tahini dressing.
