Lemon, Tahini, Basil and Caper Pasta

Ingredients

  • 500g penne
  • 2 lemons (4tbs zest and 1/4 cup juice)
  • Handful of basil
  • 4 tbs of Mayvers Hulled Tahini
  • Half a red onion
  • Handful of capers
  • Pepper
  • 4 tbs olive oil
  • 1 tsp coconut oil
  • Parmesan (optional)

Method

  1. Cook your pasta as per the instructions till al-dente.
  2. Grate the lemon zest and set aside. In a small bowl combine the tahini, lemon juice, olive oil and pepper – stir to combine.
  3. Once the pasta has cooked till al-dente, lightly fry it in the coconut oil and toss through the pepper, capers, lemon zest and a good squeeze of lemon. Cook for approx. 5 minutes until slightly golden.
  4. Remove from the heat and stir through the Mayvers Tahini dressing. Scatter the basil leaves and serve immediately. For extra yumm add a smattering of fresh parmesan on top!
