Lemon, Tahini, Basil and Caper Pasta

Ingredients
- 500g penne
- 2 lemons (4tbs zest and 1/4 cup juice)
- Handful of basil
- 4 tbs of Mayvers Hulled Tahini
- Half a red onion
- Handful of capers
- Pepper
- 4 tbs olive oil
- 1 tsp coconut oil
- Parmesan (optional)
Method
- Cook your pasta as per the instructions till al-dente.
- Grate the lemon zest and set aside. In a small bowl combine the tahini, lemon juice, olive oil and pepper – stir to combine.
- Once the pasta has cooked till al-dente, lightly fry it in the coconut oil and toss through the pepper, capers, lemon zest and a good squeeze of lemon. Cook for approx. 5 minutes until slightly golden.
- Remove from the heat and stir through the Mayvers Tahini dressing. Scatter the basil leaves and serve immediately. For extra yumm add a smattering of fresh parmesan on top!
