Hazelnut & Cacao Sugarfree Berry Bliss

Ingredients
- 1/2 cup frozen blueberries
- 1/2 cup frozen raspberries
- 2 pears cut into chunks
- 4 stalks rhubarb diced
- 3 tbs Mayvers Peanut & Cacao Spread
- 4 tbs water
- 1 cup coconut yoghurt (we like Coyo)
- 1/2 cup coconut flakes
- 1 tsp cinnamon
- 1/2 tsp ginger powder
Notes
We think the fruit makes this sweet enough however you can add a tbs of Rice Malt Syrup or our delicious creamed Manuka Honey & Cinnamon!
Method
- Cut up all your fruit and place all fruit (except for the Raspberries) into a large baking dish.
- Sprinkle coconut flakes ginger powder and cinnamon over top.
- Drizzle water and gentle toss everything so it’s coated.
- Bake in 150deg oven for approx. 30 minutes or until the fruit starts to caramelise
- Place raspberries into a small saucepan with 4 tbs of water and bring to a gentle simmer until berries start to breakdown and form a gorgeous coulis.
- Remove bake from the oven and spoon into dishes with a scoop of Coconut Yoghurt and a splash of coulis – option to add a sprinkle of black sesame seeds for extra yumm!
