Golden Spiced Thai Style Chicken Salad

Ingredients
Salad:
Chicken poached
1 Cup of Cauli- rice (store bought works)
200g Baby Tomatoes
400g Pumpkin
Handful of mixed greens
1 Lemon
1 Avocado
teaspoon of Sunflower Seeds
teaspoon of Sesame Seeds + Pepitas
Dressing:
2 Tbsp Dark Roast Crunchy Peanut Butter
1 Tbsp Coyo natural yogurt,
1 tsp Bone Marrow
1/2 tsp of Golden Glow Mix (turmeric, cinnamon, ginger & blk pepper)
1Tbsp of garlic & onion,
Pinch of ginger,
Drizzle of manuka honey,
Squeeze of lime,
Pinch of red pepper/ chilli flakes + S&P
Method
- Assemble salad with Chicken poached, Cooked Cauli-Rice, Roasted baby toms, Roasted Pumpkin, Mixed Greens. Squeeze of Lemons, Cut Avocado and a sprinkle of Sunflower Seeds, Sesame Seeds + Pepitas
- Finished a with a gut healing, Golden spiced Thai inspired dressing. Mix Mayver’s Dark Roasted Crunchy Peanut Butter and the rest of ingredients together and spoon onto salad.
