Easter Millionaire Shortbread Slice

For the Base:
1 cup oat flour (ground oats)
1 scoop protein powder of choice
3 tbsp maple syrup/honey
3 tbsp macadamia oil
1 tsp vanilla extract
For the Filling:
5 tbsp Mayver’s Smooth Peanut Butter
1/4 cup maple syrup/honey
2 tbsp macadamia oil
For the Topping:
Chocolate of choice
Easter eggs of choice
- In a small bowl combine the base ingredients until a dough like consistency forms. Transfer mixture into a rectangular small baking dish (~9cmx5cm) and press down firmly. Place in freezer.
- Meanwhile prepare the filling by combining the above filling ingredients in a small bowl. Once smooth in consistency take base out of freezer and spread out evenly on top of base. Replace in freezer.
- Lastly, melt the chocolate in a microwave safe bowl (stopping every 30 seconds to stir to prevent chocolate from overcooking). Pour oats spread out evenly over filling. To finish, place a few Easter eggs on top, including some crushed up ones.
- Freeze for approximately 2 hours or until set. Cut into desired bar/ square pieces.
