Easter Lemon Cheesecake

Ingredients
For the Crust
1 cup almond flour
1/4 cup melted butter
1 tbsp erythritol
1 tbsp of Mayver’s Hazelnut Cashew & Cacao Butter
Pinch of salt
For the Filling
250g cream cheese
3 tbsp erythritol
1/2 tsp vanilla
Zest of 1/2 lemon
1 tbsp lemon juice
Method
For the Crust
Combing all the ingredients together and add to a silicone muffin tray to create the crust layer. Freeze for 10 minutes.
For the Filling
Combine all the filling ingredients together until smooth. Place on top of the crust layer and freeze together until set.
+ For the Topping
Add melted white chocolate on top and while warm add your leftover Easter eggs!
