Crispy Turmeric Dukkah Chickpea Salad

Ingredients

Salad

Lettuce

1 tomato

half an avocado

1 cucumber

Fresh parsley

1 can chickpeas

1 tsp turmeric

1 tbsp dukkah

Sprinkle of hemp seeds

Mustard Tahini Dressing 

1 tbsp Mayver’s Hulled Tahini 

1 tbsp wholegrain mustard

1 tbsp apple cider vinegar

1 tbsp honey

Salt and pepper to taste

Method

1. Sautéed chickpeas in olive oil, turmeric and dukkah

2. Roughly chop all salad vegetables. Then mixe chickpea through.

3. Mix Mayver’s Hulled Tahini, wholegrain mustard, apple cider vinegar, honey, and salt and pepper.

4. Drizzle dressing over salad and top with hemp seeds.
