Coconut, Maca and Peanut Butter Muffins

Ingredients

  • 1/2 cup wholewheat flour
  • 1/2 cup oats (blend to flour)
  • 1 banana mashed
  • 1 egg
  • 2 Tbsp rice malt syrup
  • 1/4 cup coconut sugar or sweetener of choice
  • 1/4 cup plain fat-free yoghurt
  • 1/4 cup almond milk
  • 1/4 cup Mayver’s Peanut & Coconut Spread
  • 2 Tbsp desiccated coconut
  • 2 tsp Maca powder
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp bicarbonate soda
  • 1/2 tsp cinnamon Pinch of salt

Method

  1. Preheat oven to 220C then mix wet ingredients.
  2. Mix dry ingredients and pour the wet mix into dry until just blended
  3. Spoon into 7 silicon muffin cases in a muffin tray and fill close to the top
  4. Cook for 5mins at 220C, then reduce heat to 180C and bake for another 10mins, until a toothpick comes out clean.
  5. Drizzle with extra peanut butter to serve
