Coconut, Maca and Peanut Butter Muffins

Ingredients
- 1/2 cup wholewheat flour
- 1/2 cup oats (blend to flour)
- 1 banana mashed
- 1 egg
- 2 Tbsp rice malt syrup
- 1/4 cup coconut sugar or sweetener of choice
- 1/4 cup plain fat-free yoghurt
- 1/4 cup almond milk
- 1/4 cup Mayver’s Peanut & Coconut Spread
- 2 Tbsp desiccated coconut
- 2 tsp Maca powder
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/2 tsp bicarbonate soda
- 1/2 tsp cinnamon Pinch of salt
Method
- Preheat oven to 220C then mix wet ingredients.
- Mix dry ingredients and pour the wet mix into dry until just blended
- Spoon into 7 silicon muffin cases in a muffin tray and fill close to the top
- Cook for 5mins at 220C, then reduce heat to 180C and bake for another 10mins, until a toothpick comes out clean.
- Drizzle with extra peanut butter to serve
