Chia, Strawberry, Peach and Coconut Iceblocks

Ingredients

Another delicious pure-state healthy recipe idea from your friends at Mayver’s!

  • 1 cup chopped fresh strawberries
  • 1 peach, roughly chopped
  • 2 tbs Mayver’s Peanut & Coconut Spread
  • 3/4 cup light unsweetened coconut milk
  • 1/4 cup unsweetened Coconut Flake

Optional
Add a teaspoon of Manuka & Cinnamon Honey for a natural sweetener

Method

  1. Put strawberries and peach in a small sauce pan over medium high heat with 1 tablespoon of water. Bring to a boil, partially cover pot & then reduce heat to medium. Cook for about 5 minutes until fruit is soft, stir occasionally. Remove from heat & let mixture cool.
  2. Mix fruit with coconut milk and blend in a food processor until smooth.
  3. Put a small spoon of coconut flake in iceblock molds.
  4. Fill containers with purée, gently press another pinch of coconut on before you add the stick. Wrap with foil and pierce with iceblock sticks.
  5. Freeze for about 2 hours or until solid.
  6. If you do not have iceblock molds you can use cupcake wrappers instead.
