Breakfast Tacos

Ingredients
Tofu scramble
- 250g firm tofu crumbled
- 1 cup mushrooms sliced
- 1 tsp turmeric
- 1 tsp cumin
- 1/2 tsp cinnamon
- 1/2 tsp smoked paprika
- 2-3 Tbsp nutritional yeast
- 1 tsp curry powder (optional)
- 1/3 cup veggie stock
- 2 Tbsp Mayver’s Tahini
- 2 tsp tamari
- Salt and pepper
- Handful Kale chopped
- Corn, quinoa or wheat tortillas
Toppings
- Roasted white & sweet potatoes
- Black beans
- Red cabbage
- Avocado
- Spring onion
Method
- Add all ingredients except the veggie stock, tahini and kale to a pan and fry for 3 minutes or until fragrant.
- Add the remaining ingredients, and cook for a further 5 minutes on high heat.
- Assemble the tacos.
