Ingredients
Date, Almond & Coconut Bars
- 3/4 heaped cup rolled oats
- 3/4 cup puffed rice
- 1/4 cup shredded coconut
- 2 tsp chia seeds
- 2 Tbsp nuts lightly toasted (I used almonds and hazelnuts) chopped
- 1/2 cup dates chopped
- 1/4 cup Mayver’s Almond & Chia Spread
- 1/4 cup rice malt syrup
- 1/2 tsp vanilla extract
- 1 Tbsp coconut oil
Sweet Tahini drizzle
- 1 Tbsp Mayver’s Tahini
- 2 Tbsp rice malt syrup
- 1 Tbsp coconut oil
Method
- Line a pan with baking paper
- Mix oats, puffed rice, coconut, chia seeds, chopped nuts and dates in a bowl.
- Heat almond chia spread, rice malt, vanilla and coconut oil in a nonstick pan over low heat until smooth.
- Stir wet mixture into dry until well combined (your hands are best)
- Press into lined pan
- Put in the fridge for a couple of hours or overnight
- Cut into bars. Drizzle with Sweet Tahini Sauce if desired. Store in the fridge.
