Passionfruit Vanilla Slice with Tahini Caramel

Ingredients
Base:
- 6 soaked medjool dates
- 1 cup rolled oats
- 1 tbsp ground flaxseed
- 1 tbsp almond butter
- 1 tbsp maple syrup
Passionfruit Vanilla Topping:
- 2 cups soaked cashews
- 1 tsp Vanilla essence
- 1 Passionfruit
- 2 tbsp coconut sugar
- 1 tsp agar agar powder
- 1 tbsp Mayver’s Hulled Tahini
Tahini Caramel:
- 2 tbsp Mayver’s Hulled Tahini
- 2 tbsp maple syrup
- 1/4 pink dragonfruit (optional, for colour)
Method
Base:
- Combine in a food processor and add water until mixture becomes a doughy consistency.
- Press into a pan lined with non-stick baking paper and refrigerate while making the Passionfruit Vanilla Topping
Passionfruit Vanilla Topping:
- Combine all ingredients (except passionfruit) in a food processor, adding water to make a thick consistency
- Remove the base from the fridge and pour topping over it
- Add the passionfruit pulp and swirl through with a knife
- Freeze for 6 hours until , and enjoy with Tahini Caramel!
Tahini Caramel:
- Mix together in a bowl and thin with water as needed
