Healthy Peanut Butter and Jam Drops

Ingredients
Base:
- ½ cup Mayver’s Dark Roasted Smooth Peanut Butter
- ¼ cup coconut sugar (jimalie)
- 2 chia eggs (1 chia egg = 2 tbsp chia seeds mixed with 1 tbsp water)
- ¼ cup banana flour
- chia jam (see recipe below) + drop of Swisse blueberry superfood powder
Chia Jam:
- ½ cup berries
- 2 Tbsp chia seeds
- 2 Tbsp water
Method
- First make the chia jam: In a saucepan, heat the berries + water and bring to the heat
- Allow for the berries to break apart before removing from the heat
- Add chia seeds and allow to cool in room temp before adding to the fridge.
- Preheat the oven to 180 degrees and line a baking tray with baking paper
- Mix the peanut butter and chia eggs in a large bowl (make sure the peanut butter is nice and runny, otherwise this wont work and the mixture will be too dry)
- Add the coconut sugar (or your sweetener of choice) and the banana flour – mix well (a dough should form)
- Roll the dough into balls and flatten on the baking tray. Be sure to press your thumb into the middle of the raw cookie to make sure there is space to put the chia jam in later
- Bake cookies for 10 minutes and then remove from the oven, place roughly one teaspoon of chia jam in the centre and then return to bake for another 5-10 minutes.
- Remove from oven and allow to cool before enjoying – they come out hot!
