Mayver’s Winter Weekly Warmers – Moroccan Black Tahini Pumpkin Bake

With winter well and truly on our doorstep, now is the time to enjoy warm and heartfelt food that nourishes the mind, body and soul. We’ve been back in the kitchen and have some yummylicous (sugar-free) Winter Weekly Warmers that are sure to be a hit for even the fussiest of tastebuds (plus they are super healthy too).
We’re loving the fresh seasonal vegetables that are available at the local markets – so we thought this super easy Pumpkin, Tomato and pure-state Black Tahini Mayver’s Moroccan bake was in order!
Mayver’s pure-state unhulled Black Tahini has almost ten times the amount of calcium per100g when compared to 100g of full cream milk. Tahini is also full of super powered antioxidants like Sesamin, Sesamol and sesamolin plus Omega-6, zinc, potassium, magnesium, folic acid, niacin, selenium, copper and vitamins A & E.
Despite looking a little like axel grease (hey, so does Vegemite!) it’s actually really, creamy, super delish and slightly milder in flavour than Mayver’s Natural Hulled and Unhulled Tahini. You can find it some independent grocery and health food stores plus at Coles Supermarkets (see store listings here).

The slower you can bake this the tastier the flavours. We love serving it up with lemon quinoa (quinoa cooked in lemon juice and cinnamon quills) and steamed greens on the sides.
For something a little more spesh… add a cube or two of Persian Feta or natural plain yoghurt and a sprinkle of coriander or parsley just before you serve!
Left overs are AMAY-VAZING and can last a few days in the fridge…. Best part is you can add any left over veggies like carrots, beans or even asparagus to the base mix to make it go longer!
