Pumpkin Pepita Bars

Ingredients

  • 1/3 cup flour (coconut)
  • 1/4 tsp sea salt
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 4 large eggs
  • 1 cup pumpkin (fresh roasted)
  • 2 tablespoons Mayver’s Manuka Honey with Lemon (discontinued, use Honey instead)
  • 2 tablespoons Mayver’s Pepita Spread (discontinued, use Mayver’s Original Super Spread)
  • 2 tablespoons Mayver’s Hazelnut & Cacao Spread (discontinued, use Mayver’s Peanut and Cacao Spread)
  • 1/4 cup coconut oil
  • 1/4 cup Pepita seeds and raisins

Method

  1. In a food processor, combine coconut flour, salt, baking soda and cinnamon.
  2. Pulse in eggs, pumpkin, honey and oil until well combined.
  3. Mix in the Pepita seeds and raisins by hand.
  4. Transfer batter to an 8 x 8 inch baking tray.
  5. Bake at 180 degrees for 20-30 minutes.
  6. Cool and serve.
  1. Note: Makes approximately 16 squares. This recipe is good for people on the Paleo Diet.
