Hazelnut & Cacao Sugarfree Berry Bliss

Ingredients

  • 1/2 cup frozen blueberries
  • 1/2 cup frozen raspberries
  • 2 pears cut into chunks
  • 4 stalks rhubarb diced
  • 3 tbs Mayvers Peanut & Cacao Spread
  • 4 tbs water
  • 1 cup coconut yoghurt (we like Coyo)
  • 1/2 cup coconut flakes
  • 1 tsp cinnamon
  • 1/2 tsp ginger powder

Notes
We think the fruit makes this sweet enough however you can add a tbs of Rice Malt Syrup or our delicious creamed Manuka Honey & Cinnamon!

Method

  1. Cut up all your fruit and place all fruit (except for the Raspberries) into a large baking dish.
  2. Sprinkle coconut flakes ginger powder and cinnamon over top.
  3. Drizzle water and gentle toss everything so it’s coated.
  4. Bake in 150deg oven for approx. 30 minutes or until the fruit starts to caramelise
  5. Place raspberries into a small saucepan with 4 tbs of water and bring to a gentle simmer until berries start to breakdown and form a gorgeous coulis.
  6. Remove bake from the oven and spoon into dishes with a scoop of Coconut Yoghurt and a splash of coulis – option to add a sprinkle of black sesame seeds for extra yumm!
