Tahini Mushroom Harissa Pizza

Ingredients

  • 2 x gluten-free pita bread wraps
  • Handful of fresh rocket leaves
  • 1/2 cup of field mushrooms
  • 4 tbsp of Mayver’s Hulled Tahini
  • 1 tsp of harissa
  • Sprinkle of dukkah
  • Sprinkle of sesame seeds
  • Juice from 1/2 lemon
  • Mozzarella (optional)
  • 1 brown onion (caramelized) – optional

For meat lovers, try adding a couple of rashes of prosciutto or left over roast lamb (yumm)

Method

  1. Lay pita breads flat on tray
  2. Mix together the tahini, dukkah, lemon juice and harissa
  3. Spread mix over the 2 bases
  4. Chop the mushies into decent chunks and lightly pan fry with onion to caramelise
  5. Spread this mixture over the top and sprinkle with mozzarella and sesame seeds
  6. If you’re making the meat variation add this before the cheese
  7. Bake in over at 180degrees for approx. 20-30 minutes until the base is crispy and cheese has melted
  8. Remove from over and garnish with rocket and a squeeze of lemon
