Tahini & Rosemary Winter Bake

Ingredients

  • 1 bunch dutch carrots
  • 1 red capsicum
  • Punnet cherry tomatoes
  • 2 lemons
  • 4 small potatoes (we love kipfler)
  • 1 parsnip
  • 250g pumpkin cube
  • 3 cloves garlic
  • 2 small chillis
  • 1 red onion
  • Handful rosemary
  • Salt and pepper
  • 3 tbsp Mayver’s Hulled Tahini
  • Dash of olive oil

Method

  1. Cut everything up into nice big chunks.
  2. Make sure the pumpkin and parsnip is smaller so it cooks through
  3. Place everything in the dish and coat with olive oil
  4. Dollop the Mayvers Tahini across the top of the veggies
  5. Squeeze the juice of two lemons over the whole tray
  6. Mix it up so everything is coated nicely
  7. Bake in the oven for 1hr on 150deg tossing every 15 minutes.
  1. Note:- The slower you bake it, the more delicious the flavour!
    This is perfect served with spiced couscos or quinoa and a little persian feta mixed through (yummmm.. that was our lunch today!)
