Tahini Lettuce Cups

200g red cabbage
200g green cabbage
100g pomegranate arils
3 button mushrooms
Salt and pepper to taste
- Slice radishes, button mushrooms, red and green cabbage. Add to bowl.
- Boil frozen corn pieces, and add to bowl with edamame and pomegranate.
- Finely chop dill and mix through with salt and pepper
- Add mixture to lettuce cup and drizzle with tahini and lemon.
