Tahini Bread

5 cups flour
1 1/2 cups water
2 yeast cakes
1 1/4 cups sugar
1 tsp salt
1/4 cup olive oil
2 1/2 cups Mayver’s Hulled Organic Tahini
1 cup sugar
2 tsp cinnamon


Place the flour in a bowl. Add the water, yeast, sugar and salt; mix well.

Knead for about 10 minutes until the dough forms into a ball. Roll out on a lightly floured surface until the dough is as thin as possible; set aside.

In a separate bowl, mix together the olive oil, tahini, sugar and cinnamon until it is pasty.

Spread the mixture on the circle of dough. Make a hole in the center of the circle. Carefully roll the dough back from the center all around the edges, bringing from the center and out to the circumference.

With fingers, press gently all along the rolled sausage – like dough. Do not press too much. Cut the rolled dough into 13 pieces. Roll each one round on the floured surface. Turn the other side and roll again.

Place 4 or 5 flat thin rounds onto a baking sheet. Let it rise a little while you preheat the oven.

Bake at 230c until golden brown.

Tahini bread is delicious with tea or coffee for breakfast.
