Red Curry, Miso and Tahini Soba Noodles
Time: 15 mins | Serves: 2 -3
100g soba, dried
1 tbsp red curry paste
1 tsp red miso paste
1 tbsp Mayver’s Hulled Tahini
2 tbsp cooking saké
2 tbsp maple syrup
¼ cup almond milk
- Prepare soba as per packet instructions. Drain and rinse the soba under cold water, then set aside.
- Combine almond milk, red curry paste, miso, tahini, saké and maple syrup.
- Cook in a saucepan over medium-low heat for 5 minutes. Pour the sauce over the soba and toss well to coat the soba noodles. Serve cold or hot with vegetables, mushrooms and herbs of liking.
