Red Curry, Miso and Tahini Soba Noodles

100g soba, dried
1 tbsp red curry paste
1 tsp red miso paste
1 tbsp Mayver’s Hulled Tahini 
2 tbsp cooking saké
2 tbsp maple syrup
¼ cup almond milk


  1. Prepare soba as per packet instructions. Drain and rinse the soba under cold water, then set aside.
  2. Combine almond milk, red curry paste, miso, tahini, saké and maple syrup.
  3. Cook in a saucepan over medium-low heat for 5 minutes. Pour the sauce over the soba and toss well to coat the soba noodles. Serve cold or hot with vegetables, mushrooms and herbs of liking.
