Popcorn Protein Granola

120g Unsalted Peanut Butter

60g Apple sauce

100ml Almond milk

80g Popcorn

80g Puffed Rice

70g Puffed Spelt (or more puffed rice)

60g Puffed Quinoa (or more puffed rice)


1 – Preheat oven to 160°C and line 2 trays with baking paper.

2 – In a small bowl mix together the Unsalted Peanut Butter, applesauce and almond milk, and set aside. (You may want to heat this up in the microwave for 30 seconds to melt the peanut butter)

3 – In a (VERY) large bowl mix together the popcorn and puffed grains (rice, spelt & quinoa) and divide into 2 bowls (1 with ¼ and the other with ¾).

4 – In the bowl with ¼ of the popcorn and puffed grains, add ½ of the wet mix, and using a spatula mix together. Add another ¼ of the popcorn and puffed grains and ½ of remaining wet mixture and repeat the same process. Add the last of the popcorn and puffed grains, and the last of the wet ingredients mixing everything together finally in one bowl.

5 – Spread the mixture out over the two prepared trays, and place in the oven for a total of 15-20minutes, checking and moving the granola around every 5-10minutes to ensure even cooking. Once cooled, store in the fridge for up to 2 weeks!
