Healthy Peanut Butter Swirl Brownies
Time: 30 minutes | Serves: 8-10
2 flax eggs (2tbsp of flaxmeal + 5 tbsp of water)
1 cup of oat flour
1/4 cup cacao powder
1/2 tsp baking powder
Pinch of salt
3/4 cup plant milk
3/4 cup Mayver’s Unsalted Smunchy Peanut Butter
3/4 cup coconut sugar
1 tsp vanilla extract
2/3 cups vegan Choc chips or chopped up block pieces
1- Preheat oven to 180 degrees Celsius. Make flax eggs, combine flax meal & water and set aside.
2- Add the oat flour, cacao powder, baking powder & pinch of salt in a large bowl and whisk until combined.
3-Make a well in the center and add milk, peanut butter, coconut sugar, vanilla extract and flax egg. Mix until combined, then fold through the chocolate.
4- Line a 9×9 baking tin with baking paper and then pour brownie batter in. Spread it evenly using a spatula. For the peanut butter swirl add tablespoon size dollops of the peanut butter around the surface of the brownie. Then use a butter knife to swirl everything around.
5-Bake for 25 -30 minutes, then let cool in the pan for 10 minutes before removing. Enjoy cool with a cuppa or heated up served with a scoop of vegan vanilla ice-cream.
