Chocolate Easter Egg Nests with Cookie Dough Eggs

For the chocolate nests

100g puffed rice

200g chocolate, melted

For the cookie dough eggs

½ cup oats

1 tbsp coconut oil, melted

½ cup almond meal

2 tbsp of Mayver’s Probiotic Super Peanut Butter 

2 tbsp maple syrup


For the chocolate nests

  1. In a large mixing bowl, add the puffed rice into the melted chocolate and stir to combine.
  2. Line a muffin tin with cupcake liners and carefully spoon in the chocolate mixture.
  3. Once you have made the ‘nests’, pop them in the freezer for about an hour to completely set.

For the cookie dough eggs

  1. In a small bowl, combine coconut oil, maple syrup and peanut butter.
  2. In a blender, blitz up the oats to create a texture similar to flour.
  3. Add the blended oats and almond flour into the cookie dough egg mixture and mix until smooth.
  4. Now for the fun part – using your hands, take a small amount of the mixture at a time and roll into a small egg shape.
  5. Once you have created all the ‘eggs’, pop them into the freezer for 10 minutes to harden.

Then add the eggs to the nests and serve!
