Peanut Butter Jelly Cups

  1. For the chia jam: in a saucepan, heat the berries + water and bring to the heat.
  2. Allow for the berries to break apart before removing from the heat
  3. Add chia seeds and allow to cool at room temp before adding to the fridge
  4. In a large mixing bowl, add the peanut butter and coconut oil
  5. Mix well, ensuring the two ingredients are well combined
  6. Prepare the moulds you are going to be using (I used rubber cupcake moulds, though you could use anything so long as it will hold its shape and allow the ‘cups’ to come out with ease)
  7. Add a little of the peanut butter mixture to the bottom (about 1 Tbsp) and put into the freezer to set
  8. After 10 minutes, remove from freezer and add ¼ tsp of chia jam in the centre of the base
  9. Slowly poor peanut butter mixture over the top until the jam is completely covered
  10. Pop back in the freezer for 10 minutes before enjoying!
