Ingredients

Date, Almond & Coconut Bars

  • 3/4 heaped cup rolled oats
  • 3/4 cup puffed rice
  • 1/4 cup shredded coconut
  • 2 tsp chia seeds
  • 2 Tbsp nuts lightly toasted (I used almonds and hazelnuts) chopped
  • 1/2 cup dates chopped
  • 1/4 cup Mayver’s Almond & Chia Spread
  • 1/4 cup rice malt syrup
  • 1/2 tsp vanilla extract
  • 1 Tbsp coconut oil
Sweet Tahini drizzle

Method

  1. Line a pan with baking paper
  2. Mix oats, puffed rice, coconut, chia seeds, chopped nuts and dates in a bowl.
  3. Heat almond chia spread, rice malt, vanilla and coconut oil in a nonstick pan over low heat until smooth.
  4. Stir wet mixture into dry until well combined (your hands are best)
  5. Press into lined pan
  6. Put in the fridge for a couple of hours or overnight
  7. Cut into bars. Drizzle with Sweet Tahini Sauce if desired. Store in the fridge.
